Bacon Breakfast Taquitos
I don’t know about you, but I am always looking for an easy potable
breakfast. I found this recipe today
that sounds really good and easy. I think these would be good with any veggies
add or ham to replace the bacon.
Ingredients:
1 slice center-cut bacon or turkey bacon
1 egg
2 tablespoons shredded cheese
Two 6-inch corn tortillas
Directions:
Preheat oven to 375 degrees. Spray a baking pan with nonstick spray.
Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.)
Scramble egg in frying pan sprayed with nonstick spray. Mix in cheese and crumbled bacon stir mixture.

paper towels. Microwave for 15 seconds, or until warm and pliable.
Evenly distribute egg mixture between the two tortillas. Tightly roll each tortilla into a tube, and place seam-side down in the baking pan. If needed, secure with toothpicks. Lightly spray with nonstick spray.
Bake until crispy, 10 - 12 minutes. Enjoy!
